Banana Walnut Mini Muffins with Maltesers

Bananas are fruits that are never gonna be outdated and since we have on over ripe bananas here, my fingers are getting restless again. You know what that means? No! of course not it's not because I'm addicted to touch screen phones hahaha.. Actually my fingers are itching to try something new, to bake something unconventional, to experiment with recipes. So, what do we have here? hmmm.. let me check our cupboards. Oh! we have leftover walnuts, perfect for banana walnut muffins... YAY!!!! And what do we have here hiding? MALTESERS!!! Maybe I can incorporate it with my recipe and let's see what's gonna happen hahaha...

Ready Now??? Let's start baking!!!

What we need:




  • A bag of Maltesers
  • 3 cups of Cake Flour or just plain all purpose flour
  • mini muffin tins
  • 2 teaspoon vanilla
  • paper cups for cupcakes/muffins (small)
  • 2 teaspoon baking soda
  • 8 pcs ripe bananas
  • 4 eggs
  • 1 cup butter
  • crushed walnuts (optional)

How to bake:


  • Sift flour together with the baking soda(the whiter one) then set aside


  • Mashed the bananas using fork


  • Add all the wet ingredients; eggs, butter, vanilla to the mashed bananas



  • Add the flour 


  • Mix it all in till there are no more lumps of flour


  • Now mix the crushed walnuts


  • Add the crushed maltesers :)
    By the way I only put 30 pieces cause I'm afraid it will be too sweet.
  • Preheat oven 350 degrees F


  • Put the paper cups on the tin molds and fill it with the mixture

  • Baked for 15 minutes


Here's my first batch of muffins :) Gotta have a taste now.


This batch is just right for my taste cause I don't like it to be too sweet, but my brother said it taste bland like he's just eating plain walnuts hahaha... Maltesers aren't that sweet after all. Now what I did was I add a cup of white sugar to the remaining mixture and my gramps said the taste was heavenly ( I'm his favorite grand daughter by the way.. hahaha). The texture is super moist which I love cause I'am not a fan of muffins or cupcakes that will choke you because of it's dryness.

Yield: 38 mini muffins

Baking and cooking are my therapy it makes me ecstatic to see people around me smile after tasting the food that I cook or cookies, bread and muffins that I bake, that alone motivates me to experiment more and cook more :)

Jjampong Cheaper Version :)

Is there anyone here who loves to cook?

Me? I super duper loves to cook. big grin

I always find ways to cook something unusual and still manage to make them taste yummy, though sometimes  not all are picture worthy hahaha.

So, one cold morning I was craving to chow down a hot and spicy instant noodles in the cupboard, but thinking about the unhealthy ingredients inside one pack of it makes me think otherwise.

Did I give up? Of course not! I still have something in mind to cook. big grin  And since my Spicy Korean Rice Cake (ddeokbokki) was a hit, I think I know what I am gonna cook, plus anyone can try it cause it is cheaper yet taste the same.

Do you have any idea what it is? Yes! You're right! I'm going to cook JJAMPONG. love struck You remember that Korean-drama like commercial in your boob-tube? Yes, that kind of Jjampong, but much healthier I guess day dreaming

Now, give me a hug and let's start cooking. big hug blushing

What you'll gonna need:



  • Spring Onions 3 Stalks cut about 2 1/2 inches
  • Squid balls ( you can add any hotpot balls you like)
  • 1 Big Cabbage
  • 2 Shrimp Cubes for 1.5 liters of water
  • 1 pack egg noodles
  • 1 cup gochujang (Korean chili paste)
  • 10 eggs (boiled and peeled)


To cook :




  • Bring the 1.5 liters of water to boil. Once boiling put the 2 cubes until dissolved.
  • Next, put the squid balls, egg noodles and the chili paste. Let it simmer for 2 minutes then add the spring onions.
  • Then, put the eggs and the cabbage. Let it simmer for another minute. 


  • Serve while it's hot thumbs up 
Yield : 10 servings

This snack is superb for rainy days or just any day you wanna have a taste of Korean cuisine.

Chili Bomb and Cheese Sticks

Has anyone of you heard of a spicy food as a remedy for clogged nose?

No? Well, me too, but my ever-dearest boyfriend have a different say.

I was down with flu the whole week and because I'm having difficulty breathing, my boyfriend told me to eat lots of chilies or any spicy food so I can breathe properly. I didn't believe him of course, but that suggestion makes me crave to eat something spicy *in dreamy land* (bear with me cause I love spicy food ^-^)

So I've decided to cook some Cheese Stuffed Chilies Spring Roll. Sounds Yummy? YES! DEFINITELY *claps both hands in glee*

Okay enough of those let's start cooking as I am already starving :D

Ingredients:

  • Chili Fingers depends on how many you like (I have 25)
  • Spring Roll wrappers, cut into halves
  • 2 eggs, beaten
  • at least 1/2 cup of flour or cornstarch
  • 250g of cheese (1 small box)
  • 1/3 cup of mayonnaise
  • 1/4 cup of ketchup
  • 1 1/2 cup of oil for frying


 Procedures:



  • First, we need to wash the chilies and take out the seeds (If you want it to be more spicy leave some) set aside.
  • Separate the spring roll wrapper and cut it into halves.




  • Next, prepare the eggs and beat them thoroughly set aside.
  • Put the flour or cornstarch in a plate for later use.
  • Cut the cheese into sticks.





  • Prepare the dip, mix the mayonnaise and the ketchup then set aside






  • Stuffed the cheese in the chili fingers [be generous :D]
  • Wrapped it in the spring roll wrapper
  • Dip it in the egg and roll it on the flour/cornstarch


TADA!!! here's how it looks before frying.
I made cheese sticks also cause I have left over cheese and wrappers

  • Set aside while preparing the pan and heating the oil. Once oil is heated deep fry the Chilies.


Here's the finish product!!! YUMMY!!!

My aunt came over and ask me to prepare some on Sunday for the lunch fellowship that's how delicious they are!

I actually saw this recipe from Casa Veneracion, but I have a different name. I call it Chili Bomb :D Why? Because it's best to eat it right after cooking and when you bite it (just be careful, hot melted cheese can really burn your tongue) taste will explode inside your mouth like a bomb *winks*

"My" Hot and Spicy Korean Rice Cake (Ddeokbokki)

Spicy Korean Rice Cake? Hmmmnn..I want please!!!

Yeah, I'm drooling to have korean spicy rice cakes right now so I'm making my own :D



My Spicy Korean rice cake was made from scratch! :D
I tried to do my homemade long cylinder shaped rice cakes or garaeddok or garaetteok :)




Ingredients:



  • 2 cups glutinous rice flour
  • 1/2 ts salt
  • 3/4 cup of boiling water if using a microwave, 1 cup if using a steamer
  • 1 ts sesame oil

Procedures: 

Making rice cake with a microwave
  • Combine the rice flour, salt, and boiling water in a bowl
  • Cover it with plastic wrap, leaving a small gap to let the steam release and microwave it for 2 minutes
  • Mix the rice cake dough with a wooden spoon, recover with the plastic wrap and cook for another 2 minutes
  • Spread 1/2 ts sesame oil to the chopping board, put the rice cake in the oily spot and pound with a pestle for 5 minutes until its smooth and elastic.
Prepare the rice cakes for ddeokbokki (spicy rice cake)

  • Cut it into 8 equal parts and roll each part into a 4 inch cylinder shaped rice cake
  • Put ½ ts sesame oil onto your hands and gently rub the rice cakes to coat them in a thin sheen of oil. This will give them a nice flavor and keep them from sticking to each other.
DDEOKBOKKI PROPER

Ingredients
  • long cylinder shaped rice cake (homemade) or 1 pound bought from grocery stores
  • 4 cups of water
  • 1 shrimp cube (for the broth)
  • 1/3 cup hot pepper paste (gochujang)
  • 1 tbs sugar
  • 3 green onions (onion springs) cut into 3 inch long pieces
  • 6 hard boiled eggs
  • 250 gms of squidballs
Procedures: 
  • Add the water, and shrimp cube in a shallow pan.
  • Bring to a boil for 15 minutes over medium high heat without the lid.
  • Combine hot pepper paste, hot pepper flakes, and sugar in a small bowl. Remove the anchovies and kelp from the pot and add the rice cake, the mixture in the bowl, the green onion, and the optional fish cakes and hard boiled eggs.



  • Stir gently with a wooden spoon when it starts to boil. Keep stirring until the rice cake turns soft and the sauce thickens and looks shiny, which should take about 7 to 10 minutes
  • Remove from the heat and serve hot.

Be sure to serve it while it's hot because it is more tasty :D Also, I've used glutinous rice flour here which makes the rice cakes to soft. So, if you are planning to do your homemade long cylinder shaped rice cake use rice flour instead to make it more firm.

Easy as 1,2,3 Tuna Macaroni Salad

Salads anyone? I'm craving to eat salad so here's another yummy food that I concocted earlier.



Tuna-Macaroni Salad

What you will need:
  • Pasta, any kind ( I choose Garden Rotini, pastas made with tomato and spinach)
  • Lettuce
  • Tuna Flakes (you can also use corned tuna in can)
    *You can also substitute tuna flakes with steamed chicken breast
  • Some mayonnaise
  • Salt and pepper to taste
  • White onion  (optional)
Procedure:
  • Cook pasta according to package instruction.
  • While cooking drain the tuna flakes to discard excess oil/water then mix with the mayonnaise
  • Add in a pinch of salt and pepper to taste to the mixture. You can also add now the onions if you want
  • Wash the lettuce and prepare it in a plate, add some pasta and the dressing on top. 
YUM!!!!  :)

Marinated Chicken in Garlic,Cumin and Calamansi Pockets ♥

I am so determined  to once again lose weight, so I jog, I do Zumba Exhilarate, Hip Hop Abs and Combat Workout... hahahaha do I sound like an exercise addict? Anyways exercise will not gonna work if you won't include proper meal planning. Now I have the exhilarate pack that includes recipes of the food that you'll need to eat for 10 days. However, some of the ingredients are not available here or so expensive. So, here's what I did. I either experiment or reinvent the recipes based on the exhilarate meal plan :)

Here's one sample of my reinvented recipe :D

Marinated Chicken in Cumin and Calamansi Pockets




What you need for the recipe:

For the Marinated Chicken
Marinade:
10 calamansi (juiced and seeded, can use 2 lemon instead of calamansi)
1 tbsp of cumin powder
pinch of salt
1 cloves of garlic (chopped)
4 cuts of chicken breast skin and bone removed

Procedure:
  • Mix everything together and marinade for about 3 hours. 
  • Preheat non stick skillet on the stove top. Fry the chickens, turning occasionally to avoid burnt meat.
  • Set aside the cooked chicken meat for later use.
Here's the cooked marinated chicken in garlic, cumin and calamansi

For the pita pockets, you can either buy at the nearest grocery store or make your own "no yeast" pita/tortilla. Click here

Now here's what you got to do with those meat and pita breads.

You will need:
1 ripe avocado, sliced
1 ripe mango, sliced
3 tomatoes, seeded and cut into small cubes
1 big white onion, cut into small cubes
3 green chillis, sliced thinly
4 marinated chicken,sliced (you can also use beef and pork if you want)
some mayonnaise and hot sauce (optional)


Procedure:

Cut the pita into halves, open the pockets and put everything inside according to how much of each ingredients you like. Put some mayonnaise and hot sauce for additional taste. Though I prefer mine without the mayonnaise. A little hot sauce will do though. :)
